Summer’s here and with it comes the heat. One of the main things that are on our mind is what to cook for lunch. I’ve a great little recipe here that I tried the other day and I’ll call it white bean salad mediterranean style. It’s very easy to make and can be the ideal starter or main course – it’s up to you.
White Bean Salad Mediterranean Style
500g White beans – cooked
Half a lettuce
3 tins of tuna
4 ripe tomatoes
Some fresh basil
How to prepare White Bean Salad Recipe
You can buy white beans that are already cooked so we’ll use them to save time. Put them into a bowl to rinse them off.
Cut up the lettuce finely and put to one side.
Open up a few tins of tuna and drain off the oil.
Chop the tomatoes up into small pieces
Once the above has been don add the the ingredients to the bowl of white beans one by one. The art is to make it look appetizing.
Add a pinch of salt to taste and a sprinkling of fresh basil and you’re done. You can also play around with this and add more ingredients to suit your taste such as sweetcorn etc but I’ve purposely kept the recipe short and sweet.
As you can see, white bean salad recipe mediterranean style takes a bout 20 mins to prepare and serves four people. Use it as a starter for your main course or on it’s own – it’s delicious!
